Chicago high school students visit U of I to learn about food science careers

As head of the department of Food Science and Human Nutrition (FSHN), I was excited to host a group of 90 high school students and teachers from the Sarah B. Goode STEM Academy in Chicago. It was a great opportunity for us to showcase the exciting field of food science and nutrition and to give the students a taste of college life.

How diet quality affects the gut microbiota to promote health

URBANA, Ill. – We know that eating a healthy diet affects body weight, cholesterol levels, and heart health. A new study from the University of Illinois focuses on another component: the role of diet in supporting a healthy gastrointestinal microbiota. The researchers conclude that following the Dietary Guidelines for Americans (DGA) promotes a gut microbiota composition that may support overall health.

University of Illinois partners with Perdue Farms on food safety project

URBANA, Ill. – The University of Illinois is partnering with Perdue Farms and Cornell University on a project to study policy and management approaches to further reduce Salmonella cases linked to raw poultry.

National Nutrition Month - Alumna Feature - Dawn Jackson Blatner

As we say goodbye to National Nutrition Month, the College of ACES would like to introduce you to alumna Dawn Jackson Blatner. She graduated with a Bachelor of Science in Dietetics & Nutrition from the Food Science and Human Nutrition department in 1997. 

Zeynep Madak-Erdogan named associate dean in the Graduate College

Zeynep Madak-Erdogan, associate professor of Food Science and Human Nutrition and Sylvia D. Stroup Scholar of Cancer and Nutrition, has been named associate dean in the Graduate College at the University of Illinois. Her research and career focus on improving the quality of life and outcomes for cancer patients.

Pop-up restaurant is capstone project for hospitality management major

I am a senior at the University of Illinois Urbana-Champaign with a major in hospitality management and a minor in business. I chose hospitality management because I love to cook, and I have had unforgettable experiences that have left a memorable impact on me. Throughout my time here at the university, I developed a deeper understanding of what it means to work in the hospitality industry, specifically in a restaurant setting.

National Nutrition Month - Alumna Feature - Jenny Westerkamp

In honor of National Nutrition Month, the College of ACES proudly spotlights alum Jenny Westerkamp. She graduated with a Bachelor of Science in Dietetics & Nutrition from the Food Science and Human Nutrition department in 2008. She worked in professional sports for 13 years, including serving as the Team Nutritionist for the Chicago Bulls from 2017-2022. Now, she is a playmaker in business, serving as CEO of All Access Dietetics and assisting the next generation of dietitians.
