Chicago high school students visit U of I to learn about food science careers

As head of the department of Food Science and Human Nutrition (FSHN), I was excited to host a group of 90 high school students and teachers from the Sarah B. Goode STEM Academy in Chicago. It was a great opportunity for us to showcase the exciting field of food science and nutrition and to give the students a taste of college life.

But the larger societal context also influences how these factors affect individuals. A new study from the University of Illinois looks at the intersection of relationships, neighborhood, and mental health for Black Americans.

Graduate student works towards conserving frogs in Madagascar

After a certain point, Madagascar’s Route National 35 is only maintained by the drivers of the vehicles who attempt it–dirt bikes carrying passengers (“taxi motos”) and aged mog-style trucks on their way to pick up sacs of rice or bulk rock. Some days there are only two or three vehicles inching their way along the last stretches of red mud. Often, they get stuck, sometimes for weeks.

Cover crop management: Trade-off between carbon benefits, crop yield

A study led by researchers at the Agroecosystem Sustainability Center (ASC) and the Department of Natural Resources and Environmental Sciences at the University of Illinois Urbana-Champaign quantifies the soil organic carbon (SOC) benefits from cover crops in maize-soybean rotations in Midwestern U.S. agroecosystems.

How diet quality affects the gut microbiota to promote health

URBANA, Ill. – We know that eating a healthy diet affects body weight, cholesterol levels, and heart health. A new study from the University of Illinois focuses on another component: the role of diet in supporting a healthy gastrointestinal microbiota. The researchers conclude that following the Dietary Guidelines for Americans (DGA) promotes a gut microbiota composition that may support overall health.

ABE doctoral student receives prestigious FFAR fellowship

URBANA, Ill. – Caleb Bruhn, doctoral student in the Department of Agricultural and Biological Engineering (ABE) at the University of Illinois, has been named as a 2023 Foundation for Food and Agriculture Research (FFAR) fellow. The FFAR Fellows Program prepares the next generation of food and agriculture scientists for the workforce by providing hands-on support and mentoring from the industry.
